How we interpret the “natural” philosophy

To avoid interfering with the balance of nature, we try to reduce our interventions in the vineyard as much as possible, especially those that require the use of tractors.

We therefore limit foliar treatments to those which are strictly necessary or to preventatively in the sections of the vineyard where experience tells us the incidence of diseases is higher (often those most shaded by the wood or closest to the bottom of the valley).

In terms of the vineyard floor management, we mow the grass twice in the summer months, once in June and again in September just before the harvest, thus allowing numerous inflorescences of wild grasses that attract insects and bees.

In the cellar, the basic rule is not to remove and not to add anything to the wine.
There is not one method, but from year to year, depending on the characteristics of the must that arrives in the cellar, we operate accordingly, for example by increasing or decreasing the length of time the skins stay in contact with the juice, modifying the amount of time the wine stays in the barrel or the frequency with which a wine is racked from one barrel to another during the winter.

Here, experience and the ability to listen to the signs that the wine transmits during its evolution play a fundamental role.
