SO SAN

SO SAN is 100% Tai Rosso.
The grapes are destemmed and left in stainless steel tanks to ferment, thanks to indigenous yeasts, at a temperature of between 23° and 26°C. The wine is racked off after 20 days,
once the fermentation has completely finished and has had time to decant in the steel tanks.
The malolactic fermentation takes place spontaneously immediately after the alcoholic fermentation. No sulfur dioxide or other products are added.
The wine is bottled after 2 years of aging in large 10hl oak barrels, without any filtration.

TASTING NOTES

Light red colour.
Fruity (berries and plums) and spicy, tobacco nose. Full-bodied wine, full of character. Great structure in the mouth accompanied by ripe but not overly dominant tannins.
